Comida is comfort in the form of Mexican street food served out of the window of a big pink vending truck. Comida is also now a full service, sit down, neighborhood joint serving the things you’ve grown to love from the truck and a whole lot more.
Comida is created by Rayme Rossello who came to Colorado in 1990 by way of New York City. After working for and learning from some great local restaurant owners in Boulder, she partnered with Pam Proto and co-founded Proto’s Pizza in 1999. In 2007 Rayme graduated from the Culinary School of the Rockies with a degree in Pastry Arts and left Proto’s in search of the next thing. Comida was a dream in the works for 3 years before Tina started rolling. In February 2012 Comida opened its first brick and mortar restaurant in the Longmont neighborhood of Prospect. Summer 2013 we will open our second Cantina in The Source building in the River North neighborhood of Denver.
The Comida truck travels through neighborhoods and office parks along Colorado’s Front Range, feeding people simple and authentic Mexican flavors and making friends along the way. We’ll keep our menu small enough to cook everything inside the truck; serving tacos, roasted chickens and gorditas – all made using the freshest local ingredients and cooked from scratch.
The Comida cantina is delicious and seasonal with great salads and rich soups, as well as whole roasted chicken dinners served family style and large plates of your choice of tacos and gorditas and tostadas. And just as we always have with the truck, we have kept our prices modest while keeping the integrity of our ingredients and efforts high.
